HEALTHY AND NUTRITIOUS VEGETABLE DRY RECIPIES
POTATO CAULIFLOWER CURRY
INGREDIENTS
Potato
Cauliflower
Tomato
Coconut
Green chilli
Ginger
Garlic
Cumin powder
Coriander

METHOD
In a pan add sliced potato, cauliflower and Saute for a minute. Then add half a cup of water to cook the potato and cauliflower. In the meantime mix tomato, coconut, green chilli, ginger, garlic, cumin powder and salt in a mixer, and make it a fine paste. Once the vegetables are cooked, add this mixed paste and give it a fine stir until they are cooked. Finally sprinkle some fresh coriander leaves and serve hot.
CARROT BROCCOLI PEAS CURRY

Broccoli
Peas
Tomato

In a pan add sliced carrot, broccoli, peas and Saute for a minute. Then add half a cup of water to cook the vegies. In the meantime mix tomato, coconut, green chilli, ginger, garlic, cumin powder and salt in a mixer, and make it a fine paste. Once the vegies are cooked, add this mixed paste and give it a fine stir until they are cooked. Finally sprinkle some fresh coriander leaves and serve hot.
COCONUT PUMPKIN CURRY

Pumpkin

Ginger Garlic paste
Cumin powder

METHOD
In a pan add sliced pumpkin, and Saute for a minute. Then add half a cup of water to cook the vegies. When pumpkin becomes soft and cooked, add tomato, coconut, green chilli, ginger garlic paste, cumin powder and salt. Stir well and allow cooking until done. Finally sprinkle some fresh coriander leaves and serve hot.
SPINACH CORN CURRY

METHOD
In a pan add spinach and some water to cook. After they become mushy and cooked, add them in a blender and make it into a fine paste. Then, transfer the paste in a pan, add corn and leave them to cook. . In the meantime, mix tomato, coconut, green chilli, ginger, garlic, cumin powder and salt in a mixer, and make it a fine paste. Add this paste to the cooking spinach and corn. Leave it for few minutes and then serve hot.
